INGREDIENTS
 3.00 piece sweet potato, large (peeled and cut into wedges)
 0.00 Brown Sugar Sauce
 0.25 cup All Purpose Flour
 2.00 tbsp cornstarch
 3.00 tbsp Vegetable Oil
 1.00 cup Brown Sugar
 2.00 tbsp Water
 30.00 ml soju
 30.00 g unsalted butter (cut into 1/2 inch cubes)
 0.50 tsp Cinnamon Powder
 3.00 tbsp desicated coconut
DIRECTIONS

Peel the sweet potatoes and slice it into 1/2 inch sticks.

Submerge the sweet potato into a bowl of cold water for 10 mins.

Drain the water from the sweet potatoes and pat it dry with paper kitchen towels.

Brush Air-fry basket with vegetable oil and lay flat the sliced sweet potatoes.

Pre-heat Breville Smart Oven Air Fryer. Brush the sweet potatoes with vegetable oil.

Air-fry the sweet potatoes for 20 -25 mins under 200 Deg C.

For the brown sugar sauce: In a pan combine brown sugar and 2 tablespoon of water and let it simmer until the sugar caramelize.

Add soju and butter and let it cook fo another 2 mins. Once it thickens, turn off the stove and transfe into a bowl.

Once the sweet potatoes are cooked and crisp, place it into the bowl of bown sugar sauce and toss to coat.

Transfer it into a plate and spinkle with dessicated coconut. Serve and enjoy!
